Surime’s signature and foundational set meal.
This set features a mild soft tofu stew enhanced with red snow crab innards, creating a rich and savory flavor without being spicy. Fresh crab meat is neatly prepared and placed in the shell, allowing guests to gently add it to the stew for a richer flavor. The meal is served with nine traditional Korean side dishes, steamed rice, and a warm bowl of sungnyung (roasted rice tea).
A traditional Korean dessert is included with every meal, offering a sweet and delicate finish.

An elevated course that builds upon Surime’s Master’s Red Snow Crab Soft Tofu Set.
In addition to the original dishes, this set includes two signature additions — Maekjeok and Stingray Salad. Maekjeok, a traditional grilled pork dish from the Silla era, is reinterpreted at Surime with our house-made doenjang (soybean paste) sauce, drizzled like a salad dressing, bringing a modern harmony of flavor. The Stingray Salad (Gaori Muchim) offers a refreshing contrast, balancing the richness of the meal with its lightly spicy and tangy taste.

The most complete expression of Surime’s royal dining experience.
Building upon the Silla Royal Table, this course adds two premium dishes — Braised Short Ribs and Steamed Duck with Pumpkin. The Braised Short Ribs (Galbijjim) are slow-cooked until tender, coated in a rich soy-based sauce that embodies the depth of Korean comfort food. The Steamed Duck with Pumpkin (Danho-bak Ori-jjim) pairs the natural sweetness of pumpkin with the savory richness of duck, creating a perfectly balanced flavor.
